Zesty Oven-Baked Catfish

3 eggs, scrambled
1 cup Panko Italian style bread crumbs
1 tsp. Cajun seasoning
1/2 tsp. garlic powder
1/4 tsp. red pepper
4-6 catfish fillets

Preheat the oven to 450 degrees. Spray a shallow roasting pan with cooking spray. Mix the bread crumbs, Cajun seasoning, garlic powder, and red pepper together in a bowl. Dip the fish into the eggs, then roll in the dry crumb mixture. Place fillets in the roasting pan. Sprinkle extra crumbs over each fish. Bake, uncovered, until the fish flakes, 15 to 18 minutes.
