Quiche Lorraine

One 9-inch frozen pie crust, thawed
4 eggs
1 1/2 cups half-and-half cream
10 slices bacon, pre-cooked, cut into 1/2-inch pieces
1 cup mild cheddar or Gruyere cheese, shredded
1/4 tsp. pepper

Preheat oven to 375 degrees. In a large bowl, lightly beat the eggs with half-and-half. Stir in the bacon, cheese, and pepper. Pour into the pie shell. Place the quiche on a rimmed baking sheet and bake for 40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cover and refrigerate.

Note: Quiche can be easily reheated in the microwave.
