MeMa's Lemon Bars

A few years ago, I picked up a new cookbook in Branson, Missouri called MeMa’s Manna Recipes for the Busy Person. I can’t find it on Amazon or anywhere else, but it has tons of great recipes using ingredients that most of us have on hand. Here is an old favorite that I have made many times:

LEMON BARS

Crust:

1 cup margarine (I prefer butter)
2 cups flour
1/2 cup powdered sugar
1/4 tsp. salt

Combine and press into a 10x14 inch pan. Bake 25-30 minutes at 325 degrees.

Topping:

2 cups sugar
4 tbsp. flour
4 eggs
4 tbsp. lemon juice (can use 2 fresh lemons)
1/2 lemon rind, grated

Combine sugar and flour. Add eggs; add lemon juice and grated rind. Pour over cooked crust. Bake at 325 degrees for 30 minutes until firm. (Note: be careful not to overcook; okay if it’s a little runny.) Sprinkle with powdered sugar. Cool, and cut into bars.

TIP: When baking brownies or other bar cookies, line the pan with aluminum foil before baking. The cookies will lift out for easier cutting.
