Chicken and Dumplings

2-3 lbs. cut-up chicken
32 oz. (1 qt.) chicken broth
12 oz. pkg. frozen wide dumplings*
1 tsp. minced or granulated garlic
1 tbsp. minced onion
Salt and pepper to taste

Place chicken pieces in a large pot and add enough water to cover the chicken, plus an inch more. Boil on medium-high for approximately 40 minutes. Remove chicken to a separate bowl and add 1 quart chicken broth to remaining liquid in pot. Bring to another boil over medium-high heat and add frozen dumplings. Cover pot, reduce heat, and let simmer for 40 minutes. Stir frequently to prevent noodles from sticking.

While noodles are simmering, pull the chicken from the bone and dice. During the last 10 minutes of cooking time, add the chicken and the remaining seasonings.

Let chicken and dumplings sit for 5-10 minutes before serving.

* I use Mrs. Traylor’s frozen dumplings from Publix, but any brand will do. Just make sure they are the ones that are approximately 1-inch wide – not the skinny ones.
