Cranberry Orange Cherry Relish

This is a wonderful side dish for the holidays!

2 cups firmly packed brown sugar
1 ½ cups golden raisins
1 can Mandarin oranges (can also use 1-2 whole oranges that have been peeled and cut into pieces)
1 tsp. lemon juice
1 cup canned dark cherries, pitted and drained
½ cup white vinegar
1 cinnamon stick
½ tsp. grd. Cinnamon
½ tsp. grd. Nutmeg
½ tsp. grd. Cloves
1 ½ cup fresh cranberries
½ cup chopped walnuts

In a large pot combine brown sugar, raisins, oranges, lemon, cherries, vinegar, cinnamon stick, ground cinnamon, nutmeg, and cloves. Bring to a boil over medium heat, stirring frequently. Reduce and simmer for 10 minutes. Add the cranberries and simmer until they begin to pop, about 15 minutes longer. Remove cinnamon stick. Cover and refrigerate until cold. Can be made in advance. When ready to serve, add walnuts.
